Green smoothies… everyone loves to hate on them. They’re either over-shared or disgusting right? At the risk of this recipe being equally hated upon I will say that it is possibly the best green smoothie I’ve had (and I’ve had a fair few….!). A blend of exotic fruits, coconut kefir and greens – the result is a refreshing pina colada-like beverage making you feel like you are on a tropical island paradise, even on a (frequently) grey Paris day! I start every morning with one, dreaming I was still on holidays in the Turks & Caicos…
Tropical green smoothie
150 – 200ml coconut kefir
2 handfuls spinach or kale (or greens of choice)
1 slice pineapple or 1/2 mango
2-3 sprigs of mint (optional)
2-4 ice cubes
1. Place all ingredients in blender, wizz and enjoy!
*If the mixture is too thick, add some water and wizz again.
*You can also add your choice of super foods such as açaí, maca or chia seeds.
*I generally use coconut kefir but feel free to substitute with coconut milk or coconut yogurt. You could also use dairy milk kefir or yogurt, or your favourite grain milk. You could also use coconut water.
