More delicious leftovers: Huevos Rancheros (aka Breakfast burrito)

I promised there’d be a way to use up the rice and beans and guacamole from your pulled pork tacos (if you have leftovers that is…). How about this spicy breakfast/brunch idea: huevos rancheros. It’s basically a breakfast burrito and you can make the egg any which way you like (I fried mine though scrambled would be equally delish). Get on it!

Huevos Rancheros

Ingredients
rice and beans
1/4 bunch coriander
1/2 chorizo (about 10cm)
burrito wraps (corn ones are best)
eggs (1 per person)
guacamole
lettuce (optional)
grated cheese (optional)
sour cream or fromage blanc (optional)
sriracha (optional)
salt and pepper

Directions
1. Reheat the rice and beans on low heat (microwave or stovetop are both fine).
2. Heat a small skillet over low heat. Chop the chorizo and add to skillet. Fry on low heat until fat has rendered and chorizo is crispy.
3. Wipe most of the chorizo fat off the skillet and adjust the heat to medium. Crack in an egg per person and fry until cooked sprinkling yolks with some salt and pepper.
4. Heat up the burrito wraps. Spread burrito with sour cream, then top with rice and beans, chorizo and guacamole. Add the cheese and lettuce, then place the egg on top and squirt with sriracha. Good luck wrapping these bad boys up, may just need to settle for a folded burrito and consume with a knife and fork. Enjoy!

*Note: vegetarians can of course omit the chorizo and have an equally amazing breakfast burrito.
