Carrot cake smoothie

Even in this mid-winter chill, I love mixing up smoothie concoctions.  I admit, not all are successful, but sometimes there are delicious winners which are not only super healthy, but delicious too.  It goes without saying that all smoothies are easy!

This carrot cake smoothie is loaded with vitamin C and beta-carotene from the carrots; protein from the nuts and milk; fibre and potassium from the bananas; and blood sugar controlling properties from the cinnamon.  Winner!!

Carrot Cake smoothie 

Ingredients
1 banana
2 medium carrots
3/4C milk of choice (dairy, nut, seed…)
1/2tsp vanilla extract
5 walnuts or pecans
1/2tsp cinnamon
4 icecubes
1 medjool date or 1TB maple syrup (optional)
2TB natural yogurt (dairy, soy…) (optional)
1 scoop vanilla protein powder (optional)

Directions
1. Place all ingredients in blender and wizz until smooth. Enjoy!!

*Note: the optionals (sweetener, yogurt, protein powder) don’t make or break the result, but if you are inclined to things a little sweeter, indulge!
