Raw vegan broccoli quinoa salad

Broccoli is a poor underestimated little guy, always rejected by the kiddies (and some grown-ups… no names!). Sure the average steam or boiled broccoli isn’t the most exciting of vegetables but there are many ways to vamp up the little guy, including doing nothing at all and letting him shine in all his rawness. Like in this delicious salad. Paired with quinoa, avocado, raisins and other goodness, little broccoli shines!

Raw vegan broccoli quinoa salad

Ingredients
1/2 head broccoli
1C cooked quinoa
1/2 avocado, diced
8 cherry tomatoes, halved
1 small shallot, sliced
1/4C raisins or currants
1/4C walnuts, broken
2TB nutritional yeast
Rind of 1/4 lemon
1/3C lemon cashew dressing

Place all ingredients in bowl, stir and enjoy!

Lemon cashew dressing
1C soaked raw cashews
1C water
pinch of smoked paprika and salt
Juice of half lemon
1 small garlic clove
1/3C nutritional yeast

Place all ingredients in blender and wizz until smooth!

Optional: sprouts to sprinkle over
