Vegan gluten free 4-seed lavosh crackers

Bread is one of my biggest vices, but sometimes all I want is a crunchy cracker that is light, crisp and nutritious. These crackers hit the spot – perfect to pair with avocado, hummus, sprouts or cheese, packed with healthy seeds but not overloaded with them. Delicious and simple!

Vegan gluten free 4-seed lavosh crackers

1/2C gf flour (brown rice, buckwheat, corn)
1/4C +1TB water
1/2tsp salt
1TB sesame seeds
1TB flaxseeds (linseed)
1TB pumpkin seeds (pepita)
1TB sunflower seeds
1TB extra virgin olive oil

1. Preheat oven to 170C fanforced. Combine all ingredients and add additional TB water if required (depending on your flour). Dough should only be slightly sticky.
2. Roll dough into ball and place between two sheets of baking paper. Using a rolling pin, flatten dough to 1-2mm (make sure there are no holes!). Bake for 20-25mins, let cool for 5-10mins, then break into desired shapes and enjoy!!
