Kale, red cabbage, chickpea & beetroot salad

Another super quick salad idea, perfect for a packed lunch or just a lazy one at home! It’s super easy, colorful and nutritious too!

  
Kale, red cabbage, chickpea & beetroot salad

Ingredients
1/4c shredded red cabbage
1 large handful torn kale leaves
1 large cooked beetroot, cubed
1/2 shallot, sliced
1/2 avocado, cubed
1TB dried cranberries
1/2C cooked chickpeas
1 carrot, shaved

Dressing
1/2tsp tumeric powder
2tb lemon juice
1tb olive oil
pinch salt and pepper

Directions
1. Combine all dressing ingredients. Place kale in large bowl and rub dressing into leaves. Add remaining ingredients and enjoy!
