Beef, cashew, broccoli stirfry 

I’ve recently been running super late after work and have zero time or energy to cook. Much as I love it. Craving a bit of beef (must’ve Been the vegan January…) I thought a quick stirfry would be on the cards. And it was awesome!

Beef, cashew, broccoli stirfry

500g lean mince beef
1 large onion, sliced
3 cloves garlic, crushed
1 fresh hot chili, chopped
1 thumb sized piece ginger, grated
1 head broccoli, broken
1 bunch coriander
1/4C cashews, dry roasted
2TB oyster sauce
2TB sweet soy sauce
2TB water
1TB oil

To serve: Sriracha (optional)

1. Heat oil in wok or frying pan and brown onion and garlic for about 5mins. Add ginger and chili, cooking for a further 3mins. 

2. Increase heat and add beef with half the sauces. Cook until browned, then add broccoli and remaining sauces, lower heat, cover and let broccoli steam for around 2mins. Stir through coriander and cashews and serve.
