Quinoa almond honey crunch granola

It’s been a while since I made granola and what better way to spend a Sunday than to make a batch?! I started out thinking I’d make a chocolate flavored type, and at the last minute changed to a more versatile honey flavor. It turned out superbly and would make delicious muesli bars too (if broken into the right shape/size). As a granola though, It’s so good I need to hide it from myself!!


 Quinoa almond honey crunch granola

1C puffed quinoa
1C rolled oats
1/2C shredded coconut
1/4C almond meal
3TB hazelnuts, chopped
1TB ground flaxseed
2TB coconut sugar
50ml honey
1tsp vanilla extract
50ml coconut oil or ghee, melted
pinch salt
Optional: 2TB cacao nibs, 1/4C superberry mix (mulberry, goji, cranberry)

1. Preheat oven to 175C fan forced. Combine all dry ingredients (not the optionals, add these at the end). In a separate bowl, combine all wet ingredients.
2. Add wet mixture to the dry and combine well. Place mixture onto a baking paper lined baking tray and flatten into a slab of approx 1.5cm thickness. Bake for about 20-25mins or until golden.
3. Remove from oven and fight the urge to touch! Let it completely cool then break into desired pieces and add optional ingredients. Enjoy!!
