Coconut amaranth porridge (vegan & gluten-free)

It’s still cold and grey here in Paris and there’s nothing better than a comforting bowl of porridge to warm up and make you nourished from the get go. For a change from the comforting oats that have such popularity (with good reason!) I gave amaranth a shot in the spotlight, and boy did she shine!!  

Coconut amaranth porridge
Serves 1

Ingredients
1/4C amaranth
1/4C coconut milk
1/2C nut or soy milk (I used cashew)
3/4C water
1 medjool date
pinch salt
To serve: your choice of fruit, nuts, seeds and yogurt

Directions
1. Rinse amaranth and place in small pot with coconut milk, nut milk, water, chopped date and salt. Cook for approximately 20mins. You can add extra water or nut milk if you want a more “swelled” porridge, the amaranth with absorb most of it but will swell.
2. Tranfer to serving bowl and top with choice of fruit, nuts, seeds and yogurt. Enjoy!
